You should develop sense of what region you want your sake to come from. For me, I like light tasting sake; fruity, dry, well balanced. So, my region of choice is Tohoku. If you like a fuller tasting sake, that's dry and that bites then look to Kobe and those surrounding areas. That is just a small small recommendation. I could probably write a book and give John Gaunter a run for his money.
